специфический японский термин (этимология идёт от слова "вклинивание" ),
намекает на то, что нож изготовлен из углеродистой стали ( точнее сказать hagane ) в обкладках из мягкой нержавейки.

т.е. слой из хаганэ как-бы вклинивается между слоями нерж.

В общем то, что иногда ещё называют ламинатом.

термин достаточно общий и предполагает какую-угодно хагане --- от простой SK5 до VG10 или быстрореза.

First character / tetrad is Tōrokushōhyō 登録商標 ("registered trademark").

Rest of the brand/model name is 肥後守定駒* (with the exception of the last character, which is nonstandard by having a ┐ radical top-right). This is a vintage style of knife that was established in the Meiji period, known as a "Higonokami" or Higo no Kami 肥後守 knife. Higo was an historical province of Japan, and Japanese swordsmiths often prefaced their gō (art name) with a title such as XX no Kami (Lord of XX).
