Купил ножик Hattori HD-5 Santoku 170мм. Впечатления - вау. Шинкует феноменально. Волосы на руке бреет. Только весь в печали - как точить. В придачу камень купил водный 1000\6000 King.
Задал вопрос продавцу какой угол заточки данного ножика. В ответ получил целую инструкцию. В общем суть я понял. Но,если, у кого будет время и его не жалко будет потратить - переведите , пожалуйста,дословно, может кому из форумчан будет полезно данная информация.
Есть апекс про. Каким камнем править этот нож?
И ещё - где бы купить насадку на нож, чтобы выдержать угол, при заточке на камне. Так как я полагаю, в первый раз, это будет сложно сделать. (ну если кто знает)

We expect you would like to know about the Sharpening angle for your Hattori
HD knife. We hope below information about sharpening process by whetstone
will help your confirmation and knife sharpening.
For sharpening Hattori HD knives, we can recomend JCK Special Combination
Whetstone Grit #1000/#4000. You can make good sharpening process with only
this one stone. It is also important to do proper sharpening process for
each knives.
In future, the knife may requires to be sharpened with Rough Grit Whetstone
(Arato) (for remaking the good edge shape). W-184 Arato and JCK
Combination Whetsteon Grit #1000/#4000. These whetstone set will be great
for most situation of knife sharpening process.
When you sharpen Hattori HD knives (50/50 double bevel edge), please follow
below advice.
We recomend sharpening angle approximate 12' for sharepning both side of
blede edge. And same times of sharpening are recomended for sharpening both
side of blade edge. (These sharpening angle and method are recomended for
keeping its original edge shape).
Sharpening by whetstones is the best method for sharpening Japnese kitchen
knives. Sharp edge can stay longer and you can maintain the edge by
yourself.
When you will sharpen the Damascus kitchen knives, please also be careful to
avoid the blade surface (Damascus layers part) touching on the stone. (It
makes scartaches on the Damascus blade). You concentrate to sharpen only
edge part.
Sharpenig by whetstone requires practicing, but once you get accustomed to
do this method of sharpening, we think you can make your favorite edge and
sharp edge by yourself.
Before you sharpen Hattori HD knives with whetstone, we recomend you to
practice sharpening with your cheap or old knives. After you get accustomed
to sharpening, then you start sharpening Hattori HD knives. We expect this
